Josef Centeno has been at the forefront of Downtown L.A.’s gastronomic renaissance since the 2011 debut of his restaurant Bäco Mercat

(followed by Bar Amá, Orsa & Winston, Ledlow and P.Y.T.). Now, the chef-owner is capturing the eatery’s flavors—and his muse city’s multicultural character—in his first book, Bäco: Vivid Recipes from the Heart of Los Angeles (Chronicle Books, $35). “When I came to L.A., I thought of it as a blank canvas,” Centeno says. “It’s an amazing city for the perfect culinary storm.”
