“With heavy decorations, one can hide an imperfection with a sugar flower, but it’s not really possible with simple cakes.”
Recalling the enchanting flower of jazz chanteuse Billie Holiday and the traditional evening boutonniere of French gentlemen, cake artist Miso offers this gumpaste gardenia confection. Its tiers display the skills of the minimal touch: a smooth buttercream exterior and beneath, alternating vanilla and Earl Grey-chocolate ganache between vanilla layers. Miso explains, “With heavy decorations, one can hide an imperfection with a sugar flower, but it’s not really possible with simple cakes.” The L.A.-based pastry whiz will transition from baking for shoots and teaching her techniques abroad to wedding cake creation, beginning this year. misobakes.com.
