Europe’s sharpest alpine outfitter plants a flag, a Parisian dining legend parachutes in, and downtown’s most storied hotel rooms get an upgrade

Caviar Kaspia at the Jade Room
The City of Light beams into the St. Regis this season as Caviar Kaspia transforms the Jade Room into a candlelit boîte serving everyone’s favorite sturgeon-roe-crowned baked potatoes. Since 1927, Caviar Kaspia has drawn cultural royalty — from Ernest Hemingway to Beyoncé — to its discreet spot on the Plâce de la Madeleine. This winter it has already seen Colman Domingo, Nacho Figueras, Orlando Bloom, and Mikey Madison glide through its green curtains.
Designed by Antonio Di Oronzo of Bluarch Architecture, the space glows in Kaspia’s signature turquoise and velvet, with Joel Mesler’s typographic, Rockies-inspired art on the walls. The menu moves from smoked-salmon blinis to Aspen-exclusive dishes such as a rösti-crusted caviar pizza and grilled cheese laced with caviar. The collaboration, orchestrated by George Sotelo of Studio Sotelo alongside Kaspia CEO Ramón Mac-Crohon and The Snow Lodge founder Jayma Cardoso, imports a chic slice of Parisian nightlife to the Rocky mountain peaks. Moncler Grenoble, Marfa Stance, and FoundRae
Aspen’s newest boutiques sketch a portrait of the state of contemporary fashion on the West Coast, where performance gear, modular dressing, and symbolic jewelry happily combine. After a fashion show to end them all in January Moncler Grenoble opens its first U.S. flagship dedicated to the alpine line — an immersive, mountain-inspired space where light pools across stone and wood surfaces echoing the surrounding peaks. A cave-like entrance opens to a central tree installation and domed displays feature its technical ski gear alongside nubby hats and accessories. 501 E. Hyman Ave.
A few doors down, Marfa Stance brings its vision of modular dressing to the Rockies. Founded by Georgia Dant as a rebuttal to fashion’s churn, the label centers on reversible, layered outerwear engineered for longevity, presented as objects of design as much as utility in stylish, almost painterly colors. 535 E. Rounding out the trio, FoundRae unveils a hushed boutique conceived as a private library. Green marble floors, oak cabinetry, and velvet-lined walls frame its fine jewelry, with designs drawing heavily on symbolism, while a personalization studio is an ode to high craftsmanship. Fans of the brand include Aspen visitors like Gwyneth Paltrow, Taylor Swift, and Naomi Watts. Il Baretto
Tucked beside the dining room at Sant Ambroeus Aspen, Il Baretto unfolds like a modernist mountain den James Bond would be at home in. Firelight flickers across concrete, wood, and vintage Italian pieces sourced by its L.A. designer Giampiero Tagliafierri as bar and restaurant orbit dramatic central fireplaces that draw you in from the cold.
All winter, it becomes a private refuge for a pre- or post-dinner cocktail. From Thursday through Saturday, a DJ spins and the room hums with low conversation and the clinking of negronis. Hotel Jerome
Aspen’s grande dame, Hotel Jerome, has polished its guest rooms with a sumptuous refresh. The redesigned Deluxe King rooms and Suites layer mohair and tailored wool upholstery with hair-on-hide accents, kilim-patterned settees, and weighty cashmere drapery offset by wooden furnishings. Bathrooms extend the palette in jewel tones edged with the hotel’s green-gray trim and everywhere you look there is a nod to Aspen’s mining town past. Once the sun sets behind Ajax mountain a bassline fills the fresh alpine air as The Snow Lodge transforms the courtyard of The St. Regis Aspen Resort into the town’s most kinetic and stylish après-ski scene. Wrapped in their finest the crowd gradually sheds its layers as boot tapping turns into fully fledged dancing to the world’s top globetrotting DJs, and all before dinner.
Channeling the spirit of its East Coast sibling in Montauk, The Surf Lodge, the venue hosts après each weekend, turning the foot of the mountain into an open-air dance off.
